Tasting notes

Style: Exceptional bottle fermented (‘methode traditionelle’) sparkling blanc de noir, unusually cold season giving remarkable flavour and texture.
High altitude (570-585m), cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir (100%). Disgorged after 10 years on yeast lees in bottle, December 2022.
Appearance: Pale straw, honeyed hue with fine persistent bead
Aroma: Complex, honeyed brioche, aged dried fruit, citrus, green apple
Palate: Elegant, lively and luscious, delicate with full creamy texture, and lingering dry (brut), fresh, crisp, citrus flavoursome finish
Technical notes: Dry grown, hand-tended vines (clone D5V12, south facing slope), hand harvested , whole-bunch pressed. Full malolactic fermentation. Fermented and matured in bottle with Prise de Mousse Saccharomyces yeast. Disgorged at intervals since October 2012 with low dosage (brut style). Cork closure. Contains sulphites. 11.8% Alc/Vol (7.0 Standard Drinks)
Name: This wine is named after the crystalline ice plant, Mesembryanthemum crystallinum, which also has a sparkling appearance.

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir (100%). First release: disgorged after 3 years maturation on yeast lees in bottle, December 2022.
Appearance: Delicate pink, fine and persistent bead
Aroma: Complex green apple, freshly cut pear, wild red berry/strawberry and fresh bread/brioche
Palate: Lively and luscious, creamy texture, and long, dry (brut), citrus fruit, crisp fresh fruity finish
Technical notes: Dry grown, hand-tended vines (clone D5V12, high altitude (570-585m) south facing slope on clay loam soil), hand harvested and whole-bunch pressed. Full malolactic fermentation followed by secondary fermentation in bottle. Disgorged after 3 years on yeast lees with low dosage (brut style). Crown seal closure. Contains sulphites. 12.0% Alc/Vol (7.1 Standard Drinks).
Name: This vineyard and winery property, previously a strawberry field & cherry & nut orchard, was known as ‘Strawberry Fields’

Appearance: Very pale pink, fine and persistent bead
Aroma: Complex, lemon, citrus, honey, green apple, strawberry and brioche
Palate: Lively and luscious, rich creamy texture, and lingering fresh crisp dry finish
Technical notes: Dry grown, south facing, hand-tended vines (clone D5V12, south facing slope), hand harvested and whole-bunch pressed. Full malolactic fermentation. Fermented and matured in bottle with Prise de Mousse Saccharomyces yeast. Disgorged at intervals since October 2015 with low dosage (brut style). Cork closure. Contains sulphites. 12.0% Alc/Vol (7.1 Standard Drinks)
