Style: Bottle fermented (‘methode traditionelle’) sparkling rosé.
High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir (95%) and Pinot Meunier (2.5%), and includes Chardonnay (5%). Third release: disgorged after 3 years maturation on yeast lees in bottle, March 2020.
Appearance: Delicate pink, fine and persistent bead
Aroma: Complex strawberry with hints of raspberry, green apple, citrus and subtle brioche
Palate: Lively and luscious, creamy, and lingering dry (brut), crisp fresh fruity finish
Technical notes: Dry grown, hand-tended vines (clone D5V12, high altitude south facing slope on clay loam soil), hand harvested and whole-bunch pressed. Full malolactic fermentation. Secondary fermentation in bottle with a novel hybrid Saccharomyces yeast (Maurivin AWRI 1503). Disgorged at intervals after 2 years with low dosage (brut). Crown seal closure/limited supply under cork. Contains sulphites. 12.7% Alc/Vol (7.5 Standard Drinks)

 

2012 Estate Sparkling Pinot Noir Rosé Brut – 6 years late disgorged | $39

Tasting notes

Style: Bottle fermented (‘methode traditionelle’) sparkling rosé.
High altitude, cool climate, Piccadilly Valley (Summertown) single vineyard, Estate grown Pinot Noir (100%). Disgorged after 6 years on yeast lees in bottle, October 2019.
Appearance: Very pale pink, fine and persistent bead
Aroma: Complex, lemon, citrus, honey, green apple, strawberry and brioche
Palate: Lively and luscious, rich creamy texture, and lingering fresh crisp dry finish
Technical notes: Dry grown, south facing, hand-tended vines (clone D5V12, south facing slope), hand harvested and whole-bunch pressed. Full malolactic fermentation. Fermented and matured in bottle with Prise de Mousse Saccharomyces yeast. Disgorged at intervals since October 2015 with low dosage (brut style). Cork closure. Contains sulphites. 12.0% Alc/Vol (7.1 Standard Drinks)

Style: Exceptional bottle fermented (‘methode traditionelle’) sparkling rosé, unusually cold season giving remarkable flavour and texture.
High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir (100%). Disgorged after 7 years on yeast in bottle, October 2019.
Appearance: Very pale honeyed pink fine and persistent bead
Aroma: Complex, honey, citrus, green apple and brioche
Palate: Lively and luscious, very soft rich creamy texture, and lingering dry (brut), fresh crisp finish
Technical notes: Dry grown, hand-tended vines (clone D5V12, south facing slope), hand harvested , whole-bunch pressed. Full malolactic fermentation. Fermented and matured in bottle with Prise de Mousse Saccharomyces yeast. Disgorged at intervals since October 2012 with low dosage (brut style). Cork closure. Contains sulphites. 11.8% Alc/Vol (7.0 Standard Drinks)
