Style: Bottle fermented (‘methode traditionelle’) sparkling rosé.
High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir (95%) and Pinot Meunier (5%). Disgorged after 2 years on yeast in bottle, May 2018.
Appearance: Delicate pink, fine and persistent bead
Aroma: Strawberry with hints of raspberry, green apple, citrus and subtle brioche
Palate: Lively and luscious, creamy, and lingering dry (brut), crisp fresh fruity finish
Technical notes: Dry grown, hand-tended vines (clone D5V12, south facing slope), hand harvested and whole-bunch pressed. Full malolactic fermentation. Fermented in bottle with a novel hybrid Saccharomyces yeast for over 2 years, low dosage (brut). Crown seal closure/limited supply under cork. Contains sulphites. 12.0% Alc/Vol (7.1 Standard Drinks)

Style: Bottle fermented (‘methode traditionelle’) sparkling rosé.
High altitude, cool climate, Piccadilly Valley (Summertown) single vineyard, Estate grown Pinot Noir (100%). Disgorged after 5 years on yeast in bottle, August 2018.
Appearance: Very pale pink, fine and persistent bead
Aroma: Complex, lemon, citrus, honey, green apple, strawberry and brioche
Palate: Lively and luscious, rich creamy texture, and lingering fresh crisp dry finish
Technical notes: Dry grown, south facing, hand-tended vines (clone D5V12, south facing slope), hand harvested and whole-bunch pressed. Full malolactic fermentation. Fermented in bottle with Prise de Mousse Saccharomyces yeast for over 5 years, low dosage (brut). Cork closure. Contains sulphites. 12.0% Alc/Vol (7.1 Standard Drinks)

Appearance: Very pale honey, fine and persistent bead
Aroma: Complex, honey, citrus, green apple and brioche
Palate: Lively and luscious, very soft rich creamy texture, and lingering dry (brut), fresh crisp finish
