Tasting notes

Style: Lightly oaked, medium weight, red wine.
High altitude, cool climate, Piccadilly Valley (Ashton), single vineyard, Pinot Noir
Appearance: Medium brick red, bright
Aroma: Perfumed, complex, plum, dark berries over vanilla/cedary oak aromas
Palate: Complex dark plum, spice, game and savoury characters with a rich mid-palate, and soft lingering tannins on the finish
Technical notes: Hand-tended, predominantly north-easterly aspect, hand-harvested grapes from three Bernard clones of Pinot Noir – 114, 115 and 777. Small lot open top vat fermentation of destemmed crushed fruit with 10% whole bunches. Fermentation initiated with native vineyard (wild) yeasts and completed with a selected Saccharomyces yeast originally isolated from Burgundy. Cap submersion twice daily with 4 weeks post-fermentation maceration and full malolactic fermentation. Basket pressed wine was matured in seasoned French oak barriques for 14 months. Wines were naturally stabilised with no animal products. Contains sulphites. 14.0% Alc/Vol (8.3 Standard Drinks)

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir – warmest season on record giving ripe flavours
Appearance: Medium brick red, bright
Aroma: Complex savoury red berry fruits with balanced vanilla/cedary oak
Palate: Rich complex dark fruits, dark cherry, raspberry, plumb, vanilla and cedar oak, medium weight with soft tannins and long lingering finish
Technical notes: Hand-tended, Western aspect, bunched thinned vines, hand-harvested grapes at two maturity stages. Small lot open top vats, destemmed crushed fruit of 3x Pinot Noir clones (D5V12 and Bernard 114 and 777) with up to 5% whole bunch fermentation. Fermentations initiated with native vineyard (wild) yeasts and completed with different combinations of 5 selections of Saccharomyces yeasts. Cap submersion twice daily with up to 6 weeks post-fermentation maceration. Wine aging and malolactic fermentation in 60% new and seasoned French oak barriques for 2 years. Reserve blend of selected barriques of 65% wild ferment wine. No animal products used. Unfined and unfiltered. Contains sulphites. 14.0% Alc/Vol (8.3 Standard Drinks)

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir and Grüner Veltliner
Appearance: Light red, bright
Aroma: Highly perfumed violets, luscious complex savoury red berry fruits, Morello/Kirsch cherry, red currants and raspberry with a hint of vanilla
Palate: Juicy and fleshy complex red berries, subtle vanilla oak and balanced acidity, with fine-grained lingering tannins and fresh finish
Technical notes: Hand-tended bunched thinned vines, hand-harvested grapes at two maturity stages. Small lot open top vats of two grape variety co-ferments, destemmed crushed fruit of D5V12 Pinot Noir; one batch had Grüner Veltliner must added whereas the second batch received Grüner Veltliner skins. Fermentations were initiated with native vineyard (wild) yeasts and completed with 3 selections of Saccharomyces yeasts. Cap submersion twice daily with total maceration time of 4 weeks. Malolactic fermentation and wine matured in seasoned French oak barriques for 2 years. No animal products used. Unfined and unfiltered. Contains sulphites. 14.0% Alc/Vol (8.3 Standard Drinks)

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Merlot – excellent ripening conditions have yielded intense rich ripe flavours with soft tannin structure
Appearance: Red-purple, bright
Aroma: Lifted dark berry fruits with spicy plum and cedary oak
Palate: Rich flavour of complex ripe dark fruits, medium body with firm tannins and long finish
Technical notes: Hand-tended, Eastern aspect, low yield, hand harvested grapes on 6 April due to excellent ripening conditions. Small lot open top vats of destemmed crushed fruit. Fermentations were initiated with native vineyard (wild) yeasts and completed with a Bordeaux selected yeast to enhance Merlot aroma and a Rhone selected strain to enhance good tannin structure. Cap submersion twice daily with total maceration time of 4 weeks. Malolactic fermentation and wine matured in seasoned French oak barriques for 18 Months. No animal products used. Unfined and unfiltered. Contains sulphites. 14.0% Alc/Vol (8.3 Standard Drinks)

Palate: Rich ripe dark fruits, medium body with balanced acidity and soft tannin and long finish
Technical notes: Hand-tended, North-Eastern aspect, low yield, hand harvested grapes in April due to very warm conditions. Small lot open top vats of destemmed crushed fruit. Fermentations were initiated with native vineyard (wild) yeasts and completed with a Bordeaux selected yeast to enhance Merlot aroma and a Rhone selected strains to enhance good tannin structure. Cap submersion twice daily with total maceration time of 4 weeks. Malolactic fermentation and wine matured for 2 years with 14% merlot in the final blend. No animal products used.
