Style: Un-oaked, food friendly, fresh, crisp style, medium-bodied white wine.
High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard Estate dry grown Grüner Veltliner
Appearance: Pale yellow, bright
Aroma: Initially spring blossoms spring blossoms with honey dew melon, ripe pear, grape fruit, lemon zest & lime citrus
Palate: Medium bodied, highly textured, savoury ‘mineral’ palate with a long, crisp, dry finish, reflecting the very cool season
Technical notes: Dry grown, hand-tended vines (3x clones, south facing slope), hand harvested grapes in mid April after an exceptionally cool season, crushed with cold-temperature skin contact. Small lot, cool temperature fermentation with 5 different selected yeasts, including novel hybrid Saccharomyces yeasts and a native isolate of Saccharomyces uvarum. Cold clarified and stabilised, with no filtration; traces of milk may remain. Contains sulphites. 13.2% Alc/Vol (approx. 7.8 Standard Drinks)

Style: Lightly oaked, medium weight, fresh style white wine.
High altitude, cool climate, Piccadilly Valley (Ashton, Summertown, Piccadilly), selected vineyards, Chardonnay – very cool season giving richness but elegance
Appearance: Pale yellow, bright
Aroma: White/yellow peach, grape fruit, bosc pear, vanilla and cedar oak
Palate: Mouth filling citrus flavour and textured creamy palate with a hint of vanilla, and finishing with fresh, crisp lingering Hills acidity
Technical notes: Hand-tended vines (clones G9V7 and I10V1, east and west facing slopes and valley floor), hand harvested grapes between 17 & 24 April – latest harvest in a decade, chilled and whole bunch pressed. Small lot, cool temperature fermentation with new and seasoned French oak barriques and tank with different combinations of 4 different yeasts, including popular Chardonnay strains, Hills isolate of a cryophilic Saccharomyces uvarum and novel hybrid Saccharomyces yeasts. Full malolactic fermentation to moderate the high acidity. No animal products used. Contains sulphites. 12.7% Alc/Vol (approx. 7.5 Standard Drinks)
