Style: Medium weight, lightly oaked, red wine.
High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Pinot Noir – very cool season producing an elegant flavoured wine of excellent balance of fruit, acid and tannin
Appearance: Medium brick red, bright
Aroma: Lifted ‘fruits of the forrest’ berry perfume, a hint of violets and complex fruit-driven flavours of red berries, cherry, red currant & strawberry
Palate: Elegant, well-balanced fruit/acid/tannin palate finishing with lingering soft tannins, and a hint of spice
Technical notes: Hand-tended, Western aspect, bunched thinned vines, very late hand-harvested grapes owing to the 2023 season being the coldest since 2011, which dramatically slowed sugar accumulation and acid depletion in relation to flavour development and phenolic maturity. Consequently harvest was delayed until 26th April. Small lot open top vats, destemmed crushed fruit of 4x Pinot Noir clones (D5V12 and Bernard 114. 115 and 777). Fermentations initiated with native vineyard (wild) yeasts and completed with different combinations of 4 selections of Saccharomyces yeasts. Cap submersion twice daily with up to 4 weeks maceration. Wine aging and malolactic fermentation in 20% new and seasoned French oak barriques for 12 months. No animal products used. Unfined and unfiltered. Contains sulphites. 12.9% Alc/Vol (approx. 7.6 Standard Drinks)

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Estate grown Cabernet Sauvignon and neighbouring single vineyard Merlot
Appearance: Deep ruby garnet hue, bright
Aroma: Complex aromas of dark berries, mulberry, dark pumb, black berry, black currant, capsicum, tomato leaf and sweet spice
Palate: Moderate palate weight yet an elegant, luscious, well-balanced fruit/acid/tannin palate of complex red/dark berries and a hint of vanilla finishing with lingering fine-grained silky tannins
Technical notes: Possibly the highest altitude, dry grown, Cabernet Sauvignon in South Australia, north-east facing hand-tended low yielding vines (less than a 1 kg/vine). Hand harvested 24 April 2022. The hand-tended Merlot, having an Eastern aspect, and very low yield, was hand-harvested on 8 April. Each variety was fermented in small lot open top vats. Fermentations were initiated with native vineyard (wild) yeasts and completed with 2 selections of Saccharomyces yeasts, originating in the Bordeaux and Rhone Valley regions. Cap submersion twice daily with total maceration time of 4 weeks. Full malolactic fermentation and wine matured in seasoned American oak for 15 months. No animal products used. Unfined and unfiltered. Contains sulphites. 13.2% Alc/Vol (7.8 Standard Drinks)

High altitude, cool climate, Piccadilly Valley (Summertown), single vineyard, Merlot – excellent ripening conditions have yielded intense rich ripe flavours with soft tannin structure
Appearance: Red-purple, bright
Aroma: Lifted dark berry fruits with spicy plum and cedary oak
Palate: Rich flavour of complex ripe dark fruits, medium body with firm tannins and long finish
Technical notes: Hand-tended, Eastern aspect, low yield, hand harvested grapes on 6 April due to excellent ripening conditions. Small lot open top vats of destemmed crushed fruit. Fermentations were initiated with native vineyard (wild) yeasts and completed with a Bordeaux selected yeast to enhance Merlot aroma and a Rhone selected strain to enhance good tannin structure. Cap submersion twice daily with total maceration time of 4 weeks. Malolactic fermentation and wine matured in seasoned French oak barriques for 18 Months. No animal products used. Palate: Rich ripe dark fruits, medium body with balanced acidity and soft tannin and long finish
Technical notes: Hand-tended, North-Eastern aspect, low yield, hand harvested grapes in April due to very warm conditions. Small lot open top vats of destemmed crushed fruit. Fermentations were initiated with native vineyard (wild) yeasts and completed with a Bordeaux selected yeast to enhance Merlot aroma and a Rhone selected strains to enhance good tannin structure. Cap submersion twice daily with total maceration time of 4 weeks. Malolactic fermentation and wine matured for 2 years with 14% merlot in the final blend. No animal products used.
