2013 Estate Sparkling Pinot Noir Brut Rosé

Following average winter and early spring rains very warm and dry conditions prevailed during the 2012/2013 growing season, which was peppered by short heat spikes and tropical storms. Nevertheless the cool nights experience high in the Adelaide Hills ensured the grapes had excellent acid and flavour balance at harvest, ensuring the wine has wonderful natural crisp acidity, essential to sparkling wine structure. Harvest fell within the long term average of late February/early March. This wine owes it unique, complex flavour profile to the time honoured, traditional, bottle fermentation process (‘methode traditionelle’). This wine was first disgorged after 3 ½ years on yeast in bottle.
