2012 Estate Sparkling Pinot Noir Brut Rosé

Mild conditions with cool to cold nights were experienced during the 2011/2012 growing season to produce grapes with good flavour but softer acid balance due to a low crop yield. Two harvests were made to enhance good natural acidity essential to sparkling wine structure and to capture good flavour development giving beautifully delicate aromatic juice. This wine owes it unique, complex flavour profile to the time honoured, traditional, bottle fermentation process (‘methode traditionelle’). This wine was first disgorged after 2 ½ years on yeast in bottle.
